Duck Morel Omelet by Matt Cuddy

Duck egg omelette with morels sautéed in miso butter and smoked Gouda. Topped with ramp sambal, creme fraiche, ikura, and chives.

Ingredients:

  • Fresh morel mushrooms

Instructions:

  1. Rinse the morel mushrooms thoroughly.
  2. In a pan, simmer the morels in 1 inch of water for a few minutes. Strain the water and return the morels to the pan.
